  1. In a large stockpot, bring the water to a boil and cook the potatoes until tender. Drain and set aside. Repeat with the carrots.
  2. In a large pot, melt butter over medium heat. Add the onion and allow it to sweat until clear, stirring frequently. Add in the garlic and cook for one minute more.
  3. Add in the flour, salt, and pepper until well-mixed. Slowly mix in the broth and milk, stirring until it starts to thicken and bubble.
  4. Remove from the heat and stir in the chicken, potatoes, vegetables, and dried tarragon. Taste and adjust seasoning as needed.
  5. Preheat the oven to 425 degrees. Prepare pie crusts as directed on the box for two-crust pie using a 9-inch glass pie pan.
  6. Prepare a pie plate with your puff pastry sheet leaving enough to cover the top. Spoon the mixture into the prepared pie plate. Add the small pieces of butter on top of the filling. You can use pie topper cuttersto create a design on top, or even just free-hand with a paring knife. Carefully add the top crust and pinch the edges to seal.
  7. In a small bowl, whisk the egg. Brush the top of the pie with the egg wash. Cover with a pie crust shield and bake for about28 minutes. Remove the shield, brush with more egg wash, if needed, and bake until the crust is golden brown and the mixture is bubbly.
  8. Let stand 5-10 minutes before serving.
