The spritz will be the drink of the summer - but that doesn't mean you have to stick to the ever popular Aperol Spritz (though, we wouldn't blame you). Incredibly simple to make, these all have under 4 ingredients, are built in the glass and are endlessly sippable.

Let's start with one you've heard of, and may have already tried. A patio staple, the Aperol Spritz is a go-to on summer co*cktail menus across the country. Aperol is a vibrant orange flavored aperitif, Campari's more fun cousin. More sweet than bitter, you can adjust this spritz to taste depending on how much of the sugary taste you can handle. Make one of these, and it'll feel like you're on vacation - at least for a little while.

Aperol Spritz

Ingredients:

2 oz. Aperol (add more to taste)

3 oz. prosecco

1 oz. sparkling water

sliced orange for garnish

Method:

  1. Fill your glass (this one is the Phoebe Cobalt Universal Wine Glass) with ice.
  2. Build the drink in glass by adding the Aperol, prosecco and top with sparkling water.
  3. Garnish with fresh orange slices.

Featuring St. Germain (a sweet elderflower liqueur) and muddled mint, it's more herbaceous than citrus-y. It's is a refreshing co*cktail that begs to be sipped by the water. Hugo Spritz

Ingredients:

1 sprig mint for muddling

1 oz. St. Germain (or similar elderflower liqueur)

4 oz. prosecco

1 oz. sparkling water

mint and sliced lemon to garnish

Method:

  1. In a large glass (we used the Marrakech Red Wine Glass), add the St. Germain and sprig of mint. Muddle for 30 seconds to meld the flavors.
  2. Fill the glass with ice.
  3. Build the remainder of the drink in glass by adding the prosecco and topping with sparkling water.
  4. Garnish with another sprig of mint and freshly sliced lemon.

Those sound a little too sweet? If you're a Negroni fan, you probably have Campari in your cabinet. This bitter aperitif is the perfect match for a dry sparkling wine, and is light and refreshing after the addition of sparkling water in a Campari Spritz. Simple, classic, and oh-so-easy to make.

Campari Spritz

Ingredients:

2 oz. Campari

3 oz. prosecco

1 oz. sparkling water

green olives for garnish

Method:

  1. Fill your glass (we used a Quinn Citrine Red Wine Glass) with ice.
  2. Build the drink in glass by adding the Campari, prosecco and top with sparkling water.
  3. Garnish with a co*cktail pick of green olives (don't knock it 'till you've tried it).

Want something a little stronger? This recipe comes from Malfy Gin, who makes the beautiful petal pink grapefruit flavored Rosa Gin. Amalfi Sunset Spritz

Ingredients:

1 oz. Malfy Rosa Gin

2 oz. prosecco

2 oz. grapefruit sparkling water

sliced strawberries, orange and thyme for garnish

Method:

  1. Fill your glass (this is the Phoebe Clear Stemless Wine Glass) with ice.
  2. Build the co*cktail in the glass by adding the gin, prosecco and sparkling water.
  3. Stir to combine.
  4. Garnish with the strawberries, orange and thyme (fruit salad, anyone?).

This one's a deeper cut, but once you try it you'll be making it every weekend. Known for it's striking blue glass bottle, Italicus is a bergamot and citron scented rosolio (Italian liqueur). 1 oz. Italicus Rosolio de Bergamotto

  2. Build the drink in glass by adding the Italicus and topping with sparkling water.
